A recipe

I was talking with cryingbaby this morning about my delicious chicken that my children have been gobbling all week, and she pleaded with me to post the recipe, so here is how I make Almond Crusted Chicken:

2 large eggs
1 tsp dijon mustard
2 tsp grated orange zest
salt and pepper
2 cup sliced almonds processed into fine crumbs
1 cup panko (bread crumbs) (I use Ian's whole wheat Panko)
3 lbs boneless chicken thighs, dried

Preheat oven to 375.

Lightly beat eggs, mustard, 1 tsp salt and 1/4
tsp pepper in shallow bish. Mix almonds, 2 tsp orange zest. and panko in separate
shallow dish. Working with one piece of chicken at a time, use tongs
to dip it in egg mixture; turn to coat well, and allow excess to drip
off. Drop chicken into nut mixture and press nuts into it with
fingers. Transfer the breaded chicken to a wire rack and set over
baking sheets and repeat with remaining chicken.

Put chicken on racks+cookie sheet in oven and cook for about 25-30 minutes (until chicken is done).

If you don't have racks you can put in the oven, you can oil the bottom of your rimmed cookie sheet and put the chicken directly on the pan.

Adjust oven rack to
middle and heat oven to 200 deg.

Heat 6 T oil in heavy 12 inch nonstick skillet over med high heat
until just smoking. Lay chicken gently in skillet and cook until
golden brown and crisp on first side, about 2.5 min. Using tongs,
flip chicken, reduce heat to med and continue to cook until meat feels
firm when pressed gently, the second side is deep golden brown and
crisk, and the chicken is no longer pink in the center, about 2
minutes more.
