By the time I got home yesterday I was so freaking tired and sore! Having to stand more or less in one spot will get to me more than doing laps around that huge warehouse of store will any day. So maybe I need to rethink taking a job as a full-time cashier (even if it's offered). So far I don't think any interviewing has been done for the position. I know that right now I'm going through a bad time physically. The arthritis in my hands and feet is acting up and I feel the way I did when I worked at Wal-Mart when I was beginning to think I had developed fibromyalgia. Does fibromylagia come and go? Anyone know? If so it's more or less been in remission for about 1.5 years. I guess I need to do some research.
Since it was nice yesterday (except for that 5 minute torrent around noon), people were bringing their dogs into the store so I got to break out the dog treats. I didn't see Sailor the huge, white, stinky Great Pyrenees or Diesel the little Bully Blue but I did meet a couple of Miniature Pinschers (an older lady that traveled in a padded shopping cart and a younger sprout who couldn't stay still but was quite well-mannered. There was also sweet, gorgeous Golden Labradoodle as well as a variety of mixed breeds. Not all dogs want treats though and some can't get enough.
I don't feel too bad today despite the fact that I pretty much slept like crap. I slouched around the place until nearly noon and then decided I really needed to run some errands. Yesterday was payday so I made a run to Aldis to stock up on some staples. They had some exceptional deals so I got a little more than I had planned: 3 lb bags of small (just the size I need) sweet potatoes and 1 lb bags of jalapenos. Either tomorrow or maybe tonight I'll be donning a pair of disposable gloves and chopping those peppers up for the freezer. I also made a run by the smaller neighborhood Wal-Mart (the ones that are just a grocery store) for cat food and ibuprofen (can't run out of that right now!). I wasn't going to Wal-Mart but the smaller one was literally on the way to the library where I was going.
I had some books to take back to the library and some audiobooks to pick up. I found a new author to listen to. Or rather I found more authors that my favorite narrator - Lorelei King - has read. Actually a couple of authors: Darynda Jones and her Charley Davidson series (humorous urban fantasy) and Dana Stabenow. I've seen Stabenow's mystery books but never read any. She also has a science fiction trilogy that I'm trying first. All are read by King who never fails to make a book interesting for me.
Tomorrow I have a small shank-end ham that I bought a couple of weeks ago that I'll bake along with a baked sweet potato, some homemade applesauce and a fresh salad. Tomorrow I'm going to thin the greens in my pots (various young Asian greens, spinach, mustard spinach, arugula and some parsley and leaf lettuce) add them to a few wild, tender young dandelion greens I picked and I'm going to toss them in a lime juice and olive oil vinaigrette. I don't generally care for sweet and savory together (umami is not my thing) but the one exception is baked ham. I love it baked with pineapple and brown sugar on top (in consideration for my blood sugar I'm going with just the pineapple and a little molasses for taste) with applesauce.
I've come to the conclusion that it's really time to start eating better again. The weight has crept back up (only 5 lbs but I know it's just a slippery slope) and as I stated earlier, my body is starting to tell me it's tired. Breakfast is a tripping point for me because I do like my breakfast and it's been too heavy on carbs lately so some changes are in order. I'm going to be baking up all those little sweet potatoes and tossing them in the fridge for breakfast. Yes, they're pretty carb heavy too, but they're good carbs. I also got the ingredients for chia yogurt. I tried chia pudding before but it didn't impress me. But that was just chia seeds in sweetened milk. This time I'm going with a mixture of Greek yogurt (about half the carbs of regular yogurt) and almond milk for the moisture, chia seeds, sweetener and mixed berries on top. I saw actually 2 different recipes that I'm melding together for this. One had the yogurt and chia and sweetener mixed together in a 4 oz mason jar with the chopped fruit on top waiting to be mixed in when ready to eat. I think that would be a great mid-morning (that's 7 am for me) treat at work. I'm also going back to making breakfast casseroles that are easy to re-heat in the morning: basically an egg custard with cheese, ham and spinach. Kind of a frittata. I also saw a really neat egg dish with the whites separated, whipped to stiff peaks that had green onions, chilis and crispy bacon bits folded in then mounded on parchment paper with a well in the middle. Bake for about 3 min until set and lightly golden then add an egg yolk to the middle and bake a further 3-4 min until set. they looked delicious but a little involved so those will be a weekend thing along with Eggs in Purgatory (eggs baked in a spicy tomato sauce). I need more fish in my diet, too - though not for breakfast I think.
I'm also going to ween myself away from sucralose (Splenda). I've used it for so many years, even half and half with liquid stevia drops, that other sweeteners just don't taste right. So I got a bag of Splenda (the Aldis equivalent), a bag of granular stevia and I have I bag of erythritol and I'll make my own blend and gradually lessen the sucralose until I can omit it altogether.
I even have several low carb and gluten-free desserts and snacks that I'm going to be trying out. So there, I have a plan. Now, I just need to stick to it. But as you can see, more than half of this post has been dedicated to food glorious food! So I have my job cut out for me.
Well, this is going on longer than anticipated so I think I'm going to break it up into different posts so people can bypass what isn't of interest to them.
