So it began snowing just before 7am. Small little gentle flakes drifting slowly to the ground. Looked harmless. Unfortunately it's supposed to pretty much continue snowing for around 24 hours. By the time I awoke around 4pm the flakes were still tiny but it had begun blowing a little. There are drifts several inches high on the balcony. I went out about 1.5 hours ago and swept off part of the balcony to get to the bird feeder. There's now an even 2 inches over what I swept off. Luckily today is my day off. I wish I could say the same about tomorrow, but no. Tomorrow afternoon I'll have to spend 30-60 min digging my car out from where the snow plow will have buried it. Also, it's in the 20s right now but it'll drop to single digits by the time I have to go to work tomorrow and and by the time I leave work on Thurs morning it'll be about -5. Fun times!
But at least I'm warm and toasty now. I'm making a nice big batch of Mexican Chicken Rice soup. Per usual I'm not following a particular recipe but looked at several and I'm making my own. Start with a day-old rotisserie chicken, throw it in the pressure cooker for 10 min for nice, moist shredded chicken and a rich broth. Add onions, garlic, a little carrot, jalapeno, chayote (first time cooking with it!), rice and cilantro. Finish off with lots of lime and chunks of fresh and obscenely inexpensive avocado on top and I think it'll be a winner! I'm also throwing some boneless country pork ribs I bought on a good sale in the crock pot with some bbq sauce to shred and roll in tortillas and I'm set for the rest of the week.
This will be my last 6 day week. Next week I'll be on my regular schedule of Tues and Wed off. It's been a little tiring but I'm in such a better place physically and mentally than I was this time last month. So far the new job is a success.
