QUINOA TABOULE

HOME MORN WT=174   I'm determined this will be a GOOD food day!

BREAKFAST:  2 Lg Shrd Wht Bisquits + 1 1/2C Almond Milk
3oz Strawberries + 1oz Blueberries
instant coffee / water / T Sorgham

SNACK:   14 Plumsweets (dk choc covered dried plums)
Multi Vit +  500mg Calcium

SNACK:   Banana

VEGAN LUNCH:  
2 Joseph's Flax, Oat brand & whole wheat flour pitas (1 round, cut in half, from Walmart)
Stuffed with Taboule Quinoa.  (Quinoa is a comlete protein, containing all essential amino acids.  Don't let the picture scare you!

RANT:   Seems like no matter how many new spices I go out and drag in, the very next recipe I look at asks for all new stuff AGAIN!   I didn't have basil, so a search said I could use cinlantro for that.   I have no idea about white pepper, and just used regular.   Eventhough I buy pre-rinsed quinoa, I use a handheld mesh screen and  rinse it under the faucett about a minute anyway, there is a bitter coating.

DON'T BE AFRAID!  I have to say, that I'd never seen anything like this and when I stirred all the green herbs into the little white seeds, it was plum scary looking to a still, relatively new, veggie!   No one was there to tell me, it's ok, don't be afraid of the nice quinoa taboule.   But now I can tell you, I made it, I ate it, and will do it again!  It was truly delicious and very filling.  After I made it per instructions, I had no idea how to eat it, nor what with it, but after tasting it, I decided to add about 5 slc of cucumber chopped up, T diced parsnips (that I also didn't know what I would do with when I bought it, but the flavor seemed to go with this kind of thing), and added cherry tomatos to just what I used, as I think you should cut them fresh, and not leave them in leftover dishes.   I loaded it into the pita, and you have to be careful not to overfill, once you get a few T in, lay the pita down and kind of press to cause it to come forward int he pita, or it will just keep filling out the bottom and you'll have a mess on your hands when you go to eat it.   The things I added did not change the taste so much, I just wanted to get more nutrients. 
    As a side dish, I added another fav of mine, nuked summer squash with Galaxy Vegan Topping (kind of like Parmesan), and feel very satisfied and my system feels very stable, unlike when you eat stupid stuff all day!   I can't wait to spring this on hubby!

DINNER:
1/2 can PROGRESSO VEGETABLE CLASSIC LENTIL(actually vegan)
1/2oz Garden of Eatin' Natural Tortilla Chips broken into lentil soup
1/2 can Spinach

NIGHT SNACKS:
2oz red seedless grapes, sm orange, kiwi

LATE SNACK:  1/2C Almond milk / 500mg Calcium 

tabouli, veg*n, vegtarian, quinoa, food, vegan
