Italian sausage, chard and white bean soup

Italian sausage (chicken), 2-3 links, casings removed
2-4 cloves of garlic, chopped
2-3 carrots, chopped
1 can great northern (or other white) beans, drained
7-8 large chard leaves, cut into ribbons
chicken broth
marjoram, thyme, basil

Broccoli Soup

• 2-3 pieces Bacon, cut into pieces
• Onion, diced
• 2 cups Broccoli, chopped
• 2 small Potatoes, chopped (Russets are fine but a Yellow Finn is spectacular)
• Stock or Water

10 cups, serving 6

1 large chile (he says dried pasilla negro, but I used an anaheim or poblano)
One 15 oz can diced tomatoes in juice, pref. fire roasted
2 T olive oil
1 medium white onion
3 garlic cloves
2 Q chicken broth
1 sprig epazote (but I used some cilantro instead)
salt
