Banana Bread Pancakes

Really good recipe. Extras can be frozen for later.

Dry Mix
1 cup flour
1 Tbsp brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt

Wet Mix
1 cup mashed bananas (about 2 overripe)
1/4 cup vegetable oil
1 cup buttermilk
1 egg
1 tsp vanilla

Mix-In
1/3 cup chopped walnuts

Mix dry ingredients together in medium bowl. In a small bowl, combine bananas and oil, then add rest wet ingredients. Mix wet ingredients in bowl of dry ingredients. Mix until just combined (there should be some lumps still.). Gently fold in walnuts.
Preheat oven to 200F to keep pancakes warmed. Heat skillet over medium heat. Brush with little oil or butter. Scoop batter onto warmed skillet. Cook about 2-3 minutes until starting to look dry around edges and small bubbles appear. Flip and cook another minute or two.
Cooked pancakes can be transferred to a baking sheet and placed in oven to keep warm.

Serve with butter and syrup. Would also be good with peanut butter.
