This is easy and basic: Yoga Scones (as the kid called them)
1 tsp. baking powder
1/4 tsp. baking soda
2 C. flour
2 tsp. salt
1 T. sugar
10 ozs. plain yohurt (I have also used HyVee fruit flavored yogurt for this--the peach makes a nice delicate peach taste)
1/2 C. water
I have also added up to 1 cup of fruit. I have another recipe that adds mini chocolate chips.
Sift the flour, baking powder, soda, salt, and sugar into a bowl. Stir in the yogurt and about 1/2 C. water and bind to a smooth soft, but manageable dough. Knead lightly. Shape into a 6-inch round. Make 2 or three slashes across the top. Place on a buttered baking sheet and bake in the oven at 37 for about 40 minutes until the base sounds hollow when tapped. Cut into wedges for serving. Serves 8.
Right now I have 2 bite glazed mini choc chips scones in the oven--Mary is coming to tea after work. That recipe is a little more work and you probably want bigger scones. I got some little blue berries at the farmer's market that I'm thinking of making into scone.
