So, every year I get on some sort of holiday treat kick... last year was truffles and peppermint bark. This year is peanut brittle.
I consider this candy making training wheels. It's easy to make and not as intimidating as hard candy. I have made TONS of it this year.
The only issue is that twice now I've not cooked it long enough. I have no explanation for this. I do it exactly the same every time. The first time was a half batch. I thought maybe since it was a half batch I had pulled it too soon thinking it would burn. It came out looking yellowy/off white. It was gross looking and didn't have the right texture. I didn't know what to do... defeated, I threw it away.
Today- it happened AGAIN. This time with a full batch. And I'd already made a batch that came out perfect right before.
I tried to google if there was a way to fix it. I only found one thing and it didn't really work for the girl who tried it. So... I altered her attempt a bit and found that undercooked peanut brittle is totally salvageable!
