Easy Pumpkin-Cinnamon Streusel Muffins
Makes 12 muffins.

Ingredients:
1 box of any brand Cinnamon Streusel Muffin Mix
1 can (15oz) pure pumpkin

Directions:
1. Ignore the instructions for what to add on the back of the box of your mix.
2. Dump Mix in bowl with pumpkin, mix until the flour has vanished - don't overmix, it will be a bit lumpy and that's OK. ( Read more... )

3 packages (15 tarts each) prebaked Athens Mini Fillo Shells (or other brand, if they exist)
1 (15 oz) can pure pumpkin
2 c. frozen lite whipped topping, thawed - plus some extra for garnish
1 tsp Cinnamon
