there are quite a few ways that pre-employment background screenings can make a hit. the obvious sure-fire one is name/social (i'd imagine they will ask for your social if you go in for an interview). it can also hit on name/state of residence (from your address). there were quite a few cases where guys had fairly common names, and the background check brought up a criminal record that was not theirs.
some hits would show someone's name and sex marker, some wouldn't. a lot of that depended on the state the information was pulled from and what they would release. honestly, i think it's kind of a crapshoot.
the thing is, if you don't have anything in your background under your old OR new name, nothing's going to come up. and if something comes up that's not yours, you can go to your local police department/sheriff's office and get a copy of your (empty) record.

I do have a question for you:
If you found something that wasn't disqualifying on the record, would you bother having the applicant obtain a copy of their record?
For example if there was an arrest but no conviction for a misdemeanor or something of that sort?
