Cream of Baked Potato Soup!

Today I ran a soup that makes me pretty happy. Since I have been making soups I've gotten pretty good at using up leftovers. There was a hotel pan of roasted red skin potatoes in the cooler. They were just fine, and stuff, but I needed to make some soup. I'll give you a cut down version. I don't even have a recipe at work for it. I just made it up as I went along, scrounging up what I thought would taste good as I went.

1 tbsp veg oil
1 onion fine dice
4-5 strips bacon chopped
1 pound cooked potatoes Red skin work great, yukon gold would be fine
veggie or chicken stock to cover
1 pint cream
shredded cheddar how much do you like?
salt and pepper, 1 or two bay leaves

Saute the onion and bacon in the oil, until the onion is clear. Add the potatoes, stock, bay leaves and season to taste with salt and pepper. Bring to a boil, and simmer until the potatoes are tender. Strain, reserving the broth. Now would be a good time to pick out the bay leaves. Puree the solids, and return to the pot with the broth. Return to a simmer, and add the cheese and cream, mix well, and serve. What could be easier?? Oh, well there was the black bean and chorizo soup I made last week. Also, just making things up as I went. Yum! Maybe I'll post that one later.
