Sure, you could just call this baked eggs but they deserve their fancy name damnit! When you've got eggs this good then they are worthy of all the pomp and circumstance you can give them. This simple little dish really gives good eggs a chance to shine. I'm lucky, I get all my eggs from a friend's hens and I've never tasted better. But even shop bought free range eggs taste better than eggs from miserable hens, don't you think?
I've been seeing recipes for Oeufs en Cocotte everywhere recently. We took the opportunity of a nice sunny day to eat brunch out in the garden this morning, our first outside meal of the year, and it seemed like the perfect opportunity to try it.
