Foodies, Vegas advice needed!

Going to be in Las Vegas for the better part of a week for a wedding and related festivities. As I'm not a good gambler (an important thing to know before going to vegas) I'll not want to spend 50 hours a day in the casinos. I AM good at eating however.

So that leads me to the jist of this post, for those of you that love food and have been to vegas, I want restaraunt suggestions.

I do have a few stipulations:
1) reservations will not be doable for the most part, we're a very impromptu group. we want to be able to say "going to X to get lunch/dinner, who's in?" and just go.
2) on/near the strip. that's where we're staying, and where the plans are centered around
3) nothing overly formal. the wedding is khakis and a tommy bahama, that's about as dressed up as some of us will get
4) I'm not too worried about price personally, but some others going with me might be, so you might note that in your suggestions
5) Lunch or Dinner (or late night)

And to save a little time,
The Bellagio Buffet has already been highly recommended
and personally, I'll be eating at Mesa Grill, even if no one else goes. Bobby Flay's cooking still and flavor combinations are among my favorites.

no limits on food styles, this is a large group going, and we vary in taste, age, and income ranges.
