Baked Teriyaki Salmon (it's pornorific)

Hello all,

I'm a long time lurker, but this is the first time I've actually contributed.

A little about myself and the meal I'm currently proud enough to share with you all under the cut.

I'm an Australian currently living in Norway with my boyfriend. We inspire each other to cook (he's one of those types who, if he eats something in a restaurant that he likes, he has to go home and replicate it, then alter it to something that is often completely different). I learned how to cook from my mum and grandmother and strongly believe in the whole "Not knowing how to cook is like not knowing how to f***" theory - we all gotta eat for the rest of our lives, might as well eat well. Eating out here is very, very expensive so we do most of our cooking at home. I wanted to make something special with the ingredients we had and include some salmon as it's so readily available here.

The teriyaki sauce was made using about half cup of soy sauce, a quarter cup of sugar and a tablespoon of corn flour. I say about because I'm not 100% sure and wasn't really following a recipe as all the recipes I found included ingredients that I haven't been able to find since arriving. After the sauce thickened and cooled, I added a little more sugar as it was still a little too salty for my liking.

I placed the fillets on individual foil squares, spread a good amount of teriyaki on top, coating the sides as well and adding sliced shallots on top and of course a little white pepper and rock sea salt. Since roast onion is one of my favourites, I also put some quartered Spanish onion with balsamic dressing on top, and I then popped it all into the pre-heated oven on 200C for about 25 minutes.




I'd just like to take this moment to apologise for all the mess everywhere. We've gone from having a very large kitchen in our Sydney apartment to having basically no bench space at all.

The salmon was cooked perfectly, as was the shallots and onion.

I served with steamed carrots, broccoli and rice. Hope you enjoy, and again, sorry for the messy kitchen.
