Bailey's Banana Colada Cupcakes

I posted about my idea to Make  Bailey's Banana Colada Cupcakes here. And now I have the recipe IN PROGRESS for you. It still needs some tweaking. Please, make suggestions!

After numerous taste tests we have determined that the flavors that stand out are: chocolate, banana & liquor.

Somehow I the following flavors got lost: Bailey's & coconut.



Bailey's Cupcake (Needs work, lost flavor)
Devil's Food Cake Mix
3/4 cup Bailey's Irish Cream

- Prepare the cake mix as directed on the box SUBSITUTING 3/4 cup Bailey's for 3/4 cup water. (This is roughly half of the total 1 1/3cups water called for in the cake mix)
- Cool cupcakes
- Prepare cupcakes for filling buy cutting a cone out of the top. Baking Bites has great directions for this!

Coconut Filling (Needs work, lost flavor) Adapted from Baking Bites recipe.
1/4 cup milk
1/4 cup cream of coconut
3 T flour
1/2 cup shortening
1/2 cup sugar
1/4 cup coconut

- Whisk flour, milk & cream of coconut in small saucepan over medium heat
- Stir continuously until thick, do not boil
- Cool flour mixture
- Cream butter & sugar
- Add cooled flour mixture to creamed mixture
- Beat on high until light and fluffy (7min)
- Mix in coconut

Chocolate Rum Glaze Adapted from Baking Illustrated
1 oz unsweetened chocolate, finely chopped
1 T corn syrup
1T + 1t rum (plus extra for correct consistency)
1 1/4 cup confectioners sugar

- Melt the chocolate in a metal bowl over a pot of boiling water (be sure the boiling water does not touch the bottom of the bowl)
- Set melted chocolate aside to cool slightly
- Combine corn syrup and rum & bring to a boil
- Remove from heat
- Mix in confectioners sugar
- Mix in melted chocolate
- Add more rum until desired consistency ( I added alot more)

Banana Frosting - Family recipe from my MIL
1/3 cup butter
2 cups confectioners sugar
3T banana (approx 1 mashed banana)
1T lemon juice

- Cream butter
- Add in sugar slowly
- Add banana & juice
- Mix until fluffy

Assemby
- Bake cupcakes & prepare for filling
- Drizzle tsp of irish cream in each cupcake hole
- Fill with coconut cream & replace cap
- Coat top with chocolate glaze and allow to harden
- Pipe cut swirls on top with banana frosting
- Top with a festive tropical umbrella!
