Creamy Mushroom Broccoli Risotto w/ Panko Parmesan Crisps

I'm a late bloomer when it comes to cooking and I've only really gotten into it the past couple of years so you'll have to forgive me when I say that this is my very first risotto:




Wanting to salvage what is left of our leafy greens (I hate throwing food out because we forgot to eat them), I decided to put the risotto on a bed of leaves. The combination turned out to be a winner for both me and my fiance. Hurray! The holey- discs you see on the risotto are parmesan crisps, which I made to add a contrast in texture. This was a very delicious dinner and definitely a way for me to eat leafy greens. i'm not a salad person, I must admit.
