What to do with a big bag of incredibly strong dark chocolate?

I was on holiday in Belgium over the weekend, so, naturally, I took back a suitcase full of chocolatey goodness for friends, family, and myself (I spent about 90 euros on the stuff D:). Among the various exciting things in my haul is some dark chocolate that's something crazy like 99% coco solids (allegedly). I bought it partially for the novelty value, but mostly because I thought it could have some potentially interesting uses in cooking, since it understandably doesn't really benefit from just being eaten straight.

I have a decent amount (a few 100g I think) of the stuff, but not exactly infinite quantities. I was thinking it might be interesting to make a rich, spicy sauce with chili in it to go with red meat - possibly venison. Any idea how best to go about making such a sauce, or other kinds of meat/foods it might go better with?

Alternatively, does anyone have any other good recipes for very dark chocolate? Ideally I'd like to stay clear of cakes/biscuits/floury things, as I can't eat gluten and GF baking is a bit too much hassle for me in my current situation.
