Mocha Muffins

I haven't made muffins in such a long time! I can't even remember the last time I even made or had them. I was extremely bored today with nothing better to do, so I thought, Why not make some muffins? I usually always would have blueberry muffins, but I didn't really feel like making them because it was to tipical of me. So I tried to come up with something new. Mocha Muffins! Whats better than Chocolate and Coffee? Well, to me, that's just an amazingly great combination. I don't like semi-sweet so much, and I didn't want the muffin the be entirely dark. Then it wouldn't really be pretty. And I like my food to look pretty. So I used white chocolate chips; The best chocolate there is, in my opinion.

This recipe is pretty easy and it doesn't take to long for the muffins to bake. Muffins usually never take that long to make anyways. So if your in a real muffin crave, these won't take to long. So no worries! These would make a great breakfast. Has the coffee to kick you awake and the yummy chocolate to go with it!



Recipe

2 3/4 flour
3 large eggs
1 cup buttermilk
3/4 cup canola oil
1/2 cup strong black coffee, at room temperature
1 tsp. pure vanilla extract
1/3 cup Dutch processed cocoa powder
1 cup light brown
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup white chocolate chips

1. Preheat oven to 375 degrees.

2. In a large measuring cup or bowl whisk together the eggs, buttermilk, oil, coffee, and vanilla extract.

3. In another large bowl combine the flours, cocoa powder, brown sugar, baking powder,baking soda, and salt. Stir in chocolate chips. Fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined. Do not over mix the batter or tough muffins will result.

4. Evenly fill the muffin cups with the batter. Bake for 20-25 minutes. Cool for 5 minutes when done.
