Two cooking questions.

1. For the Madisonians on here, or anyone, really: There's a place on State Street, called Pel'meni. It's a Russian restaurant--serves potato dumplings that I love. You can get them either filled with potato, or meat, or mixed. Well, I'd really, really like to make my own, but all the pel'meni recipes I've looked at seem wrong. The pel'meni recipes I find are more like ravioli, but these are more like gnocchi in their denseness. Would these be pel'meni (пельмени), or vareniki (вареники), and do you have a recipe? (Yes, I know what the name implies, but I'm still not sure.)

2. We have a box of quinoa in the apartment that I want to make up. I know how to cook it, but I don't know what to add to it. I've only had quinoa once or twice, at the dorms, and it was good then--it was in a sort of croquette form, I suppose--but I feel like it'll be even better not mass-produced. I know I can do a stir-fry kind of thing with it, or risotto, and I've looked on Google for recipes, but I can't really find any good ones. What's a good recipe with it for dinner? (Vegetarian is preferred, but I can swing it if it's not.)
