I was in a cooking mood last night, and here's a quick overview of what i did, in case anyone finds it useful. I made the recipe up, so there're no precise measurements. i think it was Moroccan-inspired, but not really Moroccan. (for one thing, pork isn't part of the Moroccan repertoire, as far as I know.)
for meatballs, i mixed equal amounts ground pork and ground lamb with bread (old, hard wheat bread soaked in water, than broken up into tiny pieces), eggs, sugar, salt, pepper, cumin, and Jamaican jerk sauce (for spiciness). i pan-fried the meatballs in a little oil until they were fried on all sides, then reserved them.
into the pan went some chopped onion. then chopped tomatoes. then chickpeas. and salt/pepper. then, when everything was done, i added the meatballs back in, to reheat them, and garnished with chopped parsley.
i also made couscous from a box (i had the Mediterranean curry flavor, but i could have used plain, too). super easy.
VEGETARIAN VERSION: substitute meatballs with falafel. breaded/fried pieces of eggplant would work too.
NON-GROUND MEAT VERSION: you can also use pieces of lamb if you think ground meats are icky.
