more Thanksgiving questions

After much deliberation, I finally decided on the following menu for Thanksgiving, which will hopefully not take too long and leave me plenty of time for studying. My husband and I love Indian food, so I tried to fuse those flavors with the traditional Thanksgiving feast ( Read more... )

my mom taught me a trick that helps the gravy from getting lumpy... mix the flour and milk in an air tight container. just shake it all up. if you still have lumps just strain it when you're done..

for roasted sweet potatoes but sugar on them maybe? i think that would make they carmelize

Yeah, I was thinking butter + brown sugar for the sweet potatoes, but I wondered if anyone had any other suggestions / cooking technique advice.

Milk in poultry gravy? Ick.
Drippings in a saucepan over medium heat. Add flour, whipping constantly until smooth and very thick. Add water until desired consistency. Bring up to boiling, and then you're done.

You could, but it depends on the richness and saltiness of the drippings you start with. Some turkey drippings I've had just wouldn't go well with chicken or turkey broth not made from the same recipe as the drippings. Some times, the gravy was too rich and needed thinning.

lol, now that you say that. i don't think i've ever made gravy with poultry. i thought it'd be the same?

I'm not a fan of dairy in general, so I don't use milk in lots of things others would. The only gravy I'd make with any milk in it would be sausage gravy for smothering biscuits with.

I've never knowingly had a chicken or turkey gravy that used milk in it. The simple recipe of drippings, flour and water does make a tasty gravy, assuming you have good drippings.
