Here in China, I miss baking.
More than I miss almost anything else, save perhaps my friends and loved ones. So yesterday I finally snapped and made no-bake peanut butter chocolate bars, which are the closest thing I can get to making things like brownies. They turned out pretty well; the sweet peanut butter mix and the rich chocolate make a good combination. But then I had a pan of ridiculously rich sweets, and a roommate who is trying to diet and wasn't willing to help me finish these things off. Fortunately, I work at a school, and while the last thing my insane little kiddies need is more sugar, there's plenty of teachers who can always use a sugar boost. So I snuck into the staffroom while all the teachers were at lunch, put out the cookies with a note urging people to help themselves, and came back later to find them al polished off. My roommate was sent on a couting mission, and confirmed that the bars were popular. And then I decided that the most fun thing I could do with my last few months in China was sneak mysterious sweets into the office every Monday. So I will.
So here's what I need: recipes for any dessert cookies/bars/whatevers that fit the following criteria:
1. Do not require an over or any special equipment (sadly, I am restricted to my blender, my microwave, my tiny toaster over and a rice cooker).
2. Keep well overnight and can survive the 15-minute ride to school in my bike's front basket.
3. Have no obscure ingredients that probably can't be found in China. There are Western supermarkets here, but it's a bit hit-or-miss since they're trying to appeal to foreigners from all over the world. So I found a bag of oreo cookie pieces, but no graham crackers. Still, if it can be found in an upscale supermarket, there's a decent chance that something like it can be found at Carrefour or the City Supermarket.
Lighter desserts would be nice, since this week's was so rich, but really, I'm up for anything. I'm thinking the final week will be Nanaimo bars, just because they're evil.
