Chicken Stew with my favorite red curry mixture

Currently residing in my crockpot and making my kitchen smell lovely:

2 boneless skinless chicken breasts
2 cans of diced tomatoes
1 can of canellini beans
2 big handfuls of chopped spinach

Seasoning-wise I have:

3 cloves of garlic
a generous amount of Red curry powder (cardamom, coriander, red chili, cumin)
cinnamon
ginger
Korean red pepper
salt (not too much since the canned stuff is salty)

I've chucked it all in my crock pot where it is simmering happily. I'm planning on serving it for tonight's dinner with brown basmati rice.
