No bake chocolate oatmeal cookies are your friend! I've never met anyone who doesn't love them, and the only ingredient that might be tricky to obtain in a foreign country is peanut butter, which you already mentioned. And they survived shipping to camp by UPS when I was a kid, so I'm sure they'll survive a bike ride.

2 c sugar
1/4 c cocoa
1/2 c butter
1/2 c milk

Stir this all together in a big pot, and boil for 3 minutes.

Add
3 c oats
1/2 c peanut butter
1/2 t vanilla
Cook for 5 minutes or until you can't stir it anymore.

Drop onto waxed paper, aluminum foil or anything else they won't stick to using two spoons. Let them cool before trying, because burning your tongue on sugar syrup is no fun at all. (If you can't find cocoa, you can use 1 c chocolate chips or a few ounces of baking chocolate with equal success.)

Actually, the vanilla will be harder than the peanut butter- it's the only thing I'll have to go to the western supermarket for. But these look easy and tasty- thanks!

In a pinch, you can skip the vanilla, or use any flavouring or hard liquer you have on hand. I've accidentally done that many times, and no one's seemed to notice!

My mom has a recipe for fudge you make in the microwave, and I think she has one for peanut brittle, too. I'm not sure about the ingredient list, but I don't think there's anything particularly exotic -- we lived in a very small town with limited shopping opportunities when I was growing up.

If it were me, I would exhaust all possible variations on a rice krispie treat. When I was a kid we used to do them with Mars bars which was pretty good - you could try Snickers, different varieties of chocolate - whatever's available, I guess.

The other thought I had was flapjacks - although most recipes seem to say they need baking. You could always experiment with making them refrigerator style, though - if you melted the butter, honey and sugar in the microwave then stirred in the oats and left it to set it might work. (Sorry I can't be more helpful on that front - I haven't made flapjacks for years.)

I used to make this all the time when I was in adorm room - and it's really good, better the second day, not that sweet, and lasts up to 4-5 days. it's also really goodwith applesauce.

1/4 cup butter

1 tablespoon sugar

1 egg

1/2 cup molasses

1 1/4 cups flour

1 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon ginger

1/4 teaspoon salt

Method:
Cream butter with sugar. Add egg and molasses. Beat well. Stir in 1/2 cup boiling water.

Combine flour, cinnamon, soda, ginger, and salt. Stir flour mixture into creamed mixture. Pour into a greased 9 inch microwave safe pie plate. Microwave on HIGH heat about 7-8 minutes, or until a toothpick inserted in center comes out clean. To cook evenly, rotate plate 1/4 turn every 2 minutes during cooking. Cover with wax paper and allow to stand 5 minutes. Remove wax paper and invert cake on serving plate.
