Well....please take a peek.....and I'll show you how a night of sipping these:
Can turn into a scones, bacon & veggie quiche, fruit salad and sunomono salad.
These are an adapted recipe that I found on Food Network (via $40 a day with Rachael Ray) for
Marionberry Scones. Well, I live in Arizona....we don't have Marionberries, or any kind of exciting berry for that matter....so I used fresh raspberries. I also didn't have lemon extract so I used vanilla. My husband said they came out GREAT ! Soft to the touch, crumbly as they should be....perfect with coffee....not too sweet or tart:
Having not had enough in the kitchen....I moved on to making a quiche. This quiche is similar to "garbage" quiche....in that I like to use up whatever is in my fridge about to head "south"....this time it was a 5 egg quiche made with milk in the eggs....I made a blind crust....added cheese to the egg batter, some crisp bacon and sautee'd onions....topped it with fresh asparagus spears and roma tomato circles. I didn't use salt, but I added italian seasonings to the crust and topped it off with more seasonings and some fresh grated parmesan. I LOVE a good quiche....and I'm loving that I make a really good one too:
Then I thought, "hmmmm....what other trouble can I get into ?" Perhaps my hubby would like a fresh fruit salad with his breakfast in the morning:
Maybe we need some sunomono salad with our dinner tomorrow night....good times, I love a tart but slightly sweet sunomono salad:
And these are some pumpkin scones (with craisins and "pepitas" as we call them or pumpkin seeds)....this pic was actually from last week....I'm on a scone kick as of late.
This recipe was snatched from my beloved friend
lolleeroberts. I added the craisins and pepitas for extravagance, but hers are delightful and simple too:
So that's it ! I swear if I had steaks thawed, I would have been outside on the grill cooking those too ! As for the cosmos...I used Ketel One Vodka....a squeeze of fresh lime juice and straight cranberry juice (not cran-apple or any sort of blend).
Cheers !
