I got this recipe, which is used for Passover because of its lack of flour, from my neighbor. I use it year round because it always comes out properly. It's delicious!
6 Peeled Potatoes (Yukon Gold work very well)
1 Large Yellow Onion
1 Tablespoon of sugar
1 Teaspoon of salt (or less to taste)
1/3 Cup of Canola or Olive Oil
3 Eggs
Grate or process the potatoes and onion. I find the Cuisinart does the job best. To this add the sugar and salt. Beat the three eggs lightly together and add the oil. Combine the egg and oil mixture with the potato and onion mixture. Bake at 450 degrees for 1 hour in a 9 inch round pan or shallow 11x14 pan. Be sure to grease the pan with Pam to help with the removal!
