Can I start by saying y'all rock? :)

This is a recipe for my mom's clam chowder...though its *really* a corn chowder with clams in.



1 T. butter/margarine or 2 slices bacon
3 ribs of celery, sliced
1 medium onion, chopped
1-1.5 T flour
5 or 6 potatoes (I usually put more, but its just my potato fetish talking.;), cut into bite sized pieces
4 cobs of corn or 2 cans of corn or 1 bag frozen corn
2-3 cans clams, chopped or minced
1-2 T. parsley
2 cups milk
1 cup half & half
Pepper to taste

Melt butter, (If you're using bacon, mince it and cook with the celery and onion...don't let the bacon get crisp.)
add celery and onion...when the onion is cooked to transparency, add flour and mix till the butter is absorbed. Add clams, potatoes, corn (if it was on the cob, make sure its off before adding.:) parsley and clams. Add enough water to just cover everything, give it a good stir and let it cook, covered, till the potatoes are tender.

Add milk and half & half and heat till chowder is hot again. Sprinkle pepper over the top just before serving.

I usually add the milk when I put the veggies in, and add less water, and as long as I know it won't squick someone, I leave the potato skins on. You don't really *need* the clams in this...they're *good*, but if you don't like them, its a good corn chowder.:) (Logical, that.)
