I made chicken stock today. My grocery store had split chicken breasts on sale, and after removing the skin and making skinless, boneless chicken breasts out of most of the meat, I boiled up the bones and remaining meat with some carrot, celery, onion, parsley, garlic, and whole peppercorns.
So now I have several cups of nummy chicken stock (plus about a cup of cooked meat that I managed to strip from the cooked bones) waiting to be defatted and made into soup next weekend. Anyone have any good recipes? I have a couple, but I'm always up for something new.
