Finally Understand
As Luffy attacks and struggles to continue breathing just to save the Baratie and everything that the restaurant stands for, Sanji can only watch in horror and scream and pray and beg and fight against the tears.
Sanji cries out for Luffy, tells him to abandon the duel because there's no other outcome but death, and if it can be avoided, it should be. He doesn't know why he cares so much, though, because he's just a pirate who happened to damage the Baratie, because he's just a kid in a straw hat who is considered to be the temporary chore boy. He's just there to clean the dishes and ask for orders and sweep the floors and take over any other duty that needs to be fulfilled immediately before everything falls behind.
The cook doesn't understand his own actions until months later, until he's had enough time to sail the seas with Luffy and the rest of the crew. It's only then that he realizes he had been so confused because Luffy had been the first one that had wanted anything to do with him, the first one who had openly admitted to enjoying the food he makes with a sincere and giant smile on his face. It's only then that he realizes that he had been so afraid because Luffy hadn't just been looking for a cook, and that he had wanted for him to have a chance to find the All Blue, to achieve his dream. It's only then that he realizes that he didn't understand his own heart because Luffy had made him felt like his life is finally worth living.
