We have a new favorite curry recipe. We've made it a few times now, and it's just so delicious and filling. Best part is that it's both vegan and good for me with WW.

I have spent most of this past week sick. Tuesday afternoon, I started running a fever and I ended up sleeping most of Wednesday and Thursday away. By Friday, all that was left was some mild congestion and a cough that won't quit, but at least I didn't need multiple two-hour naps just to get from getting up to bedtime. Dinner was light tonight to counter some heavier meals the past couple days. I made vegetarian spring rolls and tried out a new salad recipe. It turned out pretty good, actually, enough to move it into our menu rotation.

Claiming started last night for insmallpackages and I filled my first one. Someone asked for dessert ideas/recipes that don't require an oven, and this is what I shared. I am emerging from my Thanksgiving cave, though not without stress. Too much stuff to do that's not holiday related, but at least I have time to myself again to tackle it all and a house that's been recovered from all our company.

Alicia's high school has a food fair tomorrow for all the clubs. They had to submit their proposals for what they were going to sell for their fundraising last week. Clean eating is being good to me this week. Our summer of stress packed on the pounds, so this month-long diet bet I'm doing has been a godsend. Sunday night, I made a lamb souvlaki (without pita) and a skinny apple cake that were both amazing. The cake also has a glaze but I didn't make it. We all agreed it didn't need it.
