GREEN LEAVES WITH GRILLED GOAT CHEESE
Hojas Verdes con Queso de Cabra Gratinado
Salad:
11ozs goat cheese
1 tablespoon olive oil
1 bag baby green leaves
Vinaigrette:
1/2 cup extra virgin olive oil
3 tablespoons sherry vinegar
1 tablespoon honey
Salt & pepper to taste
Vinaigrette: Dissolve the salt, pepper and honey in the vinegar and beat in the extra virgin olive oil until an emulsion forms. Cut the cheese into 3/4 inch slices and grill until golden. Serve onto plates, add the salad and dress with vinaigrette.
