CUBA ~ Spanish Sauce ~ Salsa Sofrito para Sazonar

EASY-DOES-IT 
SPANISH SAUCE
Salsa Sofrito para Sazonar

Light and easy variation of 'sofrito' that is delicious with eggs, meat, poultry and fish.

Makes 1 cup.

1/4 cup olive oil
3 garlic cloves, peeled and minced
1/2 green bell pepper, seeded and finely chopped
1/2 cup tomato sauce
1/4 cup water
1/2 teaspoon ground cumin
Salt to taste
2 teaspoons white vinegar

Heat a medium saute pan and add olive oil. When oil is heated and begins to smell fragrant, add garlic, onion, and green pepper. Cook until translucent, then add the remaining ingredients. Cook over medium-low heat for 8-10 minutes.
