Yesterday...

It went pretty well, actually. I felt a bit at loose ends because Gina, Jenny and Erin (ably assisted by Chloe) did all the cooking. It was just family - no friends this time.

There was turkey, stuffing, cranberry sauce (canned), mashed potatoes, green bean casserole (made with fresh green beans, which is always a plus), candied sweet potatoes and a roasted vegetable dish made by Jenny, which had all kinds of good things in it: carrots, beets, onions and squash and seasoned with herbs from their garden. Dessert was a choice of pumpkin or Dutch apple pie. I actually managed not to eat too much and yet try a little of everything.

Little Joe is very much into football these days. At three, it's endearing rather than irritating, especially how he would call out, "Touchdown!" and fling himself to the floor. They're both HUGE; Chloe looks more as if she's ten or eleven rather than seven. Chloe made a cheese ball that was quite tasty.

We left around eight or so. I was tired, and my foot was bothering me just a bit. We came home, watched The Princess and the Frog, which wasn't bad, but it certainly was not one of Disney's better offerings, either.

For a late snack/dessert, we had a microwaved sponge pudding. We used to buy an "instant" version at the import store, but they stopped carrying it. Here's a very easy version I found online:



Microwave Sponge Pudding

1/2 stick butter (2 oz)
1/4 c sugar (2 oz)
3/8 c self-rising flour (2 oz)
1 egg, beaten
2 T milk
2 T jam, syrup or honey

In a medium bowl, cream together butter and sugar until smooth. Mix in egg and milk gradually. Stir in flour gently. Pour 2 T syrup, jam or honey into a microwave-safe bowl. Add batter.

Cover and cook for 3-1/2 minute on high or until pudding appears set when gently jiggled. Top will still be sticky. Serve hot. Nomz!

I have no idea what we're eating tonight. Not turkey, though. Take care, and stay warm.
