Undeterred by soda bread omgthisismingingness, I embarked upon yet another culinary adventure this morning. The quest? Chocolate biscuits. The verdict so far? SUCCESS! Muahahaha!
So here we go:
Oven temp: 180C (160C in a fan oven)
Bake time: 7 mins 30 seconds
Ingredients:
100g rice flour
50g dairy free margarine
25g coconut sugar
1 heaping tsp cocoa powder
1 egg
Rub the flour, sugar and butter together until you have fine breadcrumbs. Stir in the cocoa powder. Beat the egg and mix in to combine to a stiff dough.
Take teaspoon sized balls of the dough and shape them by hand into small biscuits. Place on a sheet of greaseproof paper on a baking sheet, and bake as above.
Only tried hot so far, and they are literally just a couple of mouthfuls per biscuit, but OMNOMNOM.
The rice flour still leaves them slightly gritty, but I think a blend of rice flour and ground almond is probably the answer. That's for next attempt though. :)
