Making apple sauce . . .

We love apples!
Pete likes jarred/canned applesauce a lot.
We had a few each of five different kinds in our crisper and I decided to make some homemade apple sauce this afternoon just to use them up. I’d never made it before (my mom used to make it a lot growing up from our own apples) so I looked up a recipe and it sounded quite easy. Probably the hardest part was paring, coring and cutting up the 16 apples I used. My hands and fingers were pretty cramped by the time I was finished doing that chore.
The apples I used were Honey Crisp, Pink Lady, Ever Crisp, Snap Dragon and Granny Smith. The first four cooked down quickly, and the three Granny Smiths gave it some nice texture. I added sugar, couple sprinkles of salt, water, cinnamon, a dash of cloves and the juice of one lemon, simmered it for 20 minutes, then used a potato masher and let it cool before I put it in a big jar.
I have to say it was pretty darn good! Pete had a dish of it warm before I put it in the fridge.
