Late afternoon, I was planning on having The Husband walk over to the markets to get ingredients for dinner and for the next few days. Just as he was about to leave, lo the heavens opened and poured forth etc. Total downpour. I couldn't make him go out in that, so I tried to scrounge together a meal with what we had. I cut up a yam into fries, and made experimental salmon cakes, which turned out AMAZING.

Cheesy Dill Pickle Salmon Cakes

Two 213g cans (roughly 1 lb) canned salmon (sockeye)
Two eggs
Two baby dill pickles, minced
pinch of dried dill
approximately 1/2 c shredded extra sharp cheddar (did not measure, grated directly into the mixing bowl)
25 g saltine cracker crumbs (8 crackers)
Oil for frying

Preheat cast iron pan to medium heat, with a small amount of oil. Combine all ingredients, crushing or removing any bones from the salmon. Form into patties and fry until both sides are nicely crusty and brown, about 15 min total.

Makes about six patties.

I took a bite and said "Hey, this is actually really good!" The cheese is very subtle, just adding another level of savoriness and also changing the texture a bit I think. Pickle and salmon are the main flavors. The best part is the crust--it made a really nice textural contrast between the crispy exterior and the tender, flaky interior. And the pickle added internal contrast as well.

Anyway I ate two and a half patties! Haha. And I would have eaten more except it was all eaten up! No leftovers of any kind tonight.

So I'm definitely going to make that again. And maybe double it so I can freeze some.

I'm trying to eat salmon at least once a week now that I'm in the third trimester, so I get my omega-3s. Salmon is my favorite fish anyway. I wish I liked anchovies and sardines more. I will want to experiment with them more in the future, but for the time being I need dinners I know everyone will like.

I have a cookbook I got as a present from a relative in Hawai'i, called Hawai'i's SPAM Cookbook, which also has recipes in it for sardines and other canned meats, so I keep meaning to try some of its recipes.

That reminds me that I actually have a can of Spam in my cupboard. My mom bought it for me when Pippa was just born. I just went and checked and it's still not expired! Oh Spam.
