On rereading my food-tagged posts, I notice I have failed you, my reader, in the simplest damn entree ever.
For this, my apologies.
Bits:
- (N) Chicken breasts. Boneless.
- (1) zip-top bag.
- (some) Italian dressing. If you want to make it yourself, start with a vinaigrette, add some sugar, some black pepper, some red pepper, and some thyme/whatever. Big bottle, if you go the smart way.
Steps
- Ideally, you've planned and realized you need to make this more than 24 hours in advance. Let's be real, though. You're doing it for dinner tonite, it's 8am, you're plotzing.
- Chicken + bag + dressing. Throw in some spice things. Garlic, Random 'boxed spring' spice mix, whatever.
- Go to work
- So, now, it's like 6, you're home. Preheat the oven to 350 (american)
- Chicken goes in a casserole dish, you can either use the marinade, or a new (non citrus) thing to cover it. Well, more for a small bath for flavoring, and extra moisture. Cover the dish.
- Cook covered for an hour, while you go 'hell. rice? stuffing? soba?'
- Fifteen minutes before chicken-hour, you should be working on your sauce. I'm still failing, horribly, at even a simple white sauce. I'm down to it being overly clumpy, tho, so hope springs eternal. This is also an EXCELLENT time to put mushrooms on top of your chicken. Because only godless communists don't like mushrooms.
- Seriously, after an hour, the chicken is done. EAT. Brown rice works well with it, as does good white, or what not.
