Spicy asian beef noodle bowls
1 pound round steak, cubed
4 large portabella mushrooms
4 cloves garlic, minced
1 inch of ginger grated or finely chopped
1 tbsp vegetable oil
spicy black bean sauce
a whole mess of bok choy, chopped
3 packs of fresh jumbo udon
Boiling water
Heat oil in nonstick skillet or wok. Add garlic and ginger and saute for 2 minutes or so. Add mushrooms and steak and saute until pink on all sides. Remove this and keep warm. Add bok choy to skillet and saute til softened 5-8 minutes. Add back beef mixture and black bean sauce to taste (I tossed in some red pepper flakes too and a smidge of hoisin sauce).
In boiling water, toss in udon and boil 2-3 minutes until softened and hot.
Serve stir fry mix over udon noodles with some sauce. Yum.
Cornbread surprise
1 cornbread batter (for 9x9 inch pan)-use your fave recipe
4 TJ's cooked chicken apple sausages, sliced thin.
4-5 onions thinly sliced
1 tbsp olive oil or butter
Heat oil or butter in skillet. Add onions and cook over low heat to carmelize, about 30 minutes, stirring occasionally. Add sausage at end to cook a bit. Add half batter into 9x9 pan. Top with sausage mix and top with remaining batter. Bake at 350 for about 30-40 minutes. Easy goodness.
