Gluten Allergies

A friend of the family found out this year that she can't eat gluten. So no more store bought cookies, fresh breads, or thick beers. She's uberdy bummed out! I'm gonna make her some homemade cupcakes since there's so many goodies out there she can't really have anymore.

How many of you have friends with gluten allergies? When you bake for them, what flour substitutes do you use? Is there anything else you substitute?
