another frosting question....

I'm diabetic and as such i dont use sugar in my cupcakes (i use Splenda), but i can never decide what to use for frosting. I want to try something that doesnt use alot of icing sugar if i can help it, but then i dont know!! Ive never really frosted my cupcakes before, or if i do i use buttercream but i get a little freaked out at the amount of fat ( Read more... )

for cream cheese frosting, you could sweeten it with splenda, and use meringue powder to help stiffen it up a bit. it's just powdered egg whites, no sugar or anything, so it should be fine for you. ^_^

My mom used to make one with baking chocolate, condensed milk (it think), vanilla and probably sweetner in it when my dad was still alive (he was diabetic). Either that or you can try the cream cheese for sure. I've done that without sugar before.

Only problem with this is the condensed milk is rather high in sugar. :)

My best friend is diabetic and I bake for her all the time.

I use low-fat cream cheese and a small amount of stevia to make her frosting.
Also, adding a little flavoring such as vanilla or almond works well too.
You don't notice the lack of sugar if the flavor is great. :)

I do not like overly sweet frosting and use this often for my own baking.
