Friday Night Cupcake Woes
Does anyone know why cupcakes sink in the middle? There are certain batches that just always seem to do that. What the heck?
Now I need to whine for a few moments, and I won't bore my poor roommmate with this stuff. Baking nerds, lend me your ears!!
Tonight I intended to make 3 batches of cupcakes: vegan atomic, carrot cake, and mint chocolate.
I made the vegan atomic first, since I wasn't sure I had enough soy yogurt, and those are the only ones that NEED to be vegan. So I drop the container of yogurt on the floor, spilling a good amount of it on the floor, making it so I definitely didn't have enough for all three recipes, and will have to make some adjustments.
Then I forgot that the vanilla cupcake recipe I wanted to use for the atomic ones needs applesauce. I only have cinnamon apple sauce in the house, so I had to just use it and hope for the best.
Then I completely forgot to dye the atomic ones neon green. All of these things I could have overcome, but then when I pulled them out of the oven, they were so stuck to their papers, they are totally unservable. Nerds usually make the atomic ones pretty sticky, but it's never been this bad. So now I have to go to grocery store to replenish ingredients and start all over. :(
Then I started on the carrot cake. This was going just fine, until I remembered AFTER I put them in the oven that I didn't add the CARROTS!!! A half hour of my life is gone, never to be gained back, spent shredding obnoxious carrots that now sit in my fridge. I haven't yet decided if I'll bring the carrot-less cakes and call them "spice cake" and pretend it's all on purpose, or remake those too. I would try them and see how they taste, but that recipe always comes up short of 12, and I'm hesitant to lessen it by sampling.
Whine whine whine.
The good thing is, the "unservable" atomic ones won't go to waste. My boyfriend lives in a house of crusty dumpster-diving types who will eat anything, especially if it's going to be wasted otherwise, so they will gobble up the sticky papery messes with glee.
