Whenever I feel terrible at school, I know that at the end of the day, there's always something I can do to make myself a bit happier. Thank God for baking. I'm starting to feel that I'm just not cut out for the business world. I spent 1 1/2 years considering switching to arts and 1 1/2 years convincing myself that Business is really useful. For 2 days a week, I endure lessons with technical terms flying past my head - debt ratio, credit something, selective decision marketing, porter's five forces and the likes of it. You get the picture... Every week I brace myself for lessons with people fighting to talk in class, thankfully, in a pretty civilised manner (you do get some really good insights but at times it's just trying to talking something out of nothing). The only redeeming factors about school now is my friends, cross country and the 4h film class that I run to on tuesdays just to escape from the glassy corporate atmosphere of my school.
I'm actually starting to worry about the future now. Maybe 10 years down the road you'll find me reading twisted fairytales to little kids, "Rapunzel rapunzel let down your hair! Not on the hairs of my chinny chin chin!", or I'll indulge myself in a pretty pink kitchen teaching little girls dressed in fairy costumes how to bake cupcakes with pink fairy frosting. You know where to send your kids next time.
Anyway today I came back and decided to make something really simple. Our trusty oven died on us a couple of weeks back so my mum and I hijacked my brother's oven. It's the simplest thing ever but it's pretty cool too because it really does get the baking done, at a faster rate. We had a packet of organic rolled oats at home (also salvaged from my brother's kitchen of expiring groceries) so I decided to make some just to add to my growing pile of cereal.
This recipe was kind of throw-in-whatever-you-think-is-nice. So I mixed in some leftover nuts, a bit of nutella, some maple syrup, little bit of butter and a bit of olive oil, shoved it in the oven for 20 minutes and out came a nice tray of addictive granola. It's yummier than popcorn!
Poppable nutella and maple granola
3 cups rolled oats
1/2 cup maple syrup
2 tablespoons butter (melted)
2 tablespoons olive oil
1-2 tablespoons nutella (depending on how sweet you want it to be)
as much mixed nuts as you like
1) Mix the rolled oats, maple syrup, butter and olive oil in a large bowl. Make sure you mix it well.
2) Stir in nutella and nuts making sure the nutella doesn't end up in clunks. You want it to be evenly spread.
3) Spread the mixture evenly on a baking tray.
4) Bake at 160 degrees C for 20-25 minutes until golden brown. Stir mixture with spatula halfway through.
5) Remove from oven and allow to cool before storing in air tight containers.
6) Granola can be kept for up to 3 weeks. Serve with yoghurt or milk and fruit.
