Quinoa Flakes Substitute

I am making a vegan gluten-free nut loaf, which calls for quinoa flakes. Alas! The store that I previously got them at no longer carries them. For those unfamiliar, they are the consistency of light fluffy snow, and you cannot get the same affect from grinding quinoa in a blender, from what I gather ( Read more... )

Seems their function is to bind everything together, right? I've put oatmeal in nut loafs before and its turned out well. Could you just use quinoa or some other gluten free grain?

I'd recommend replacing with quick or instant oatmeal (make sure it's not some sugary flavor, of course). However, oats are not always gluten-free, so be sure you buy gluten-free oats.

I know this is a bit after the fact, but you can use oats gluten free or otherwise; but you want to blitz them up in a food processor for a bit to get them the texture of quinoa flakes. HtH.
