I am making a vegan gluten-free nut loaf, which calls for quinoa flakes. Alas! The store that I previously got them at no longer carries them. For those unfamiliar, they are the consistency of light fluffy snow, and you cannot get the same affect from grinding quinoa in a blender, from what I gather.
Does anyone know what would be a good substitute? I am thinking that ground flax seeds have a similar consistency, but I am very new to gluten free cooking. Or maybe oatmeal?
