Here is the recipe I mentioned yesterday. It has orange zest as well as the concentrate. I didn't remember that. It's been so long since i've made this, but it was a favorite of my dad and brother.
1 can (6 oz) Orange Juice Concentrate
1 tbsp Grated Orange Rind
2 tbsp Soy Sauce
1 tbsp Minced onion (i used dried)
1/4 parsley or tbsp dried parsley (i never put this in)
1 clove minced garlic
1 chicken pieced OR 8 boneless skinless breasts
Heat oven to 400. Combine everything except chicken. Pour over chicken in 9x13 glass pan. (i guess you could let it marinate for a bit) Cover and bake for 45 minutes. Uncover and bake til tender. Baste several times. Thicken remaining sauce and spoon over chicken (i don't remember ever needing to thicken it).
I always halfed this recipe. Using 4 chicken breasts and would make orange juice with the leftover concentrate.
