Wanting variation on low GI diet

I have PCOS, and last week I was able to meet with a specialist and they adjusted my medication and put me on a diet specifically for insulin resistance. And after fighting my weight for 15 years (since I was ten, sadly) the weight is just melting of. It's like something clicked in my body and it's actually functioning how it should be.

But, I need variation. I am sticking to foods that are low in sugar, and the only sugar substitute I can use is Stevia - the others make me sick. We are trying to cut down on the saturated fats that I consume, too. I've been eating lots of veggies, 2 fruit servings per day, lots of protien (fish, shrimp, cottage cheese, etc), and going by the eating schedule they suggest, and eat 3 small "meals" with scheduled snacks in between. My body runs so much better this way, but I want variety, horribly.

I am looking for any recipes, hints, tips, or websites for resources for low-sugar, low fat foods that anyone might have. It's been tricky, and Special K bars and Vitamin Water 10 have been a godsend, but I really need to learn more about this. Anything anyone might be able to throw my way would be appreciated.
