Coconut Rice

Recipe: Coconut Rice
From: Susan Powell - Lithia Park Cafe
Serves: 4


1 c. basmati rice
1/2 onion, chopped
2 Tbsp. ghee or butter
1/2 can coconut milk (well shaken), plus enough water to make 1-2/3 c.
1/4 tsp. salt
grated coconut, toasted (optional)

Soak rice in water at least 1/2 hour and drain.

Sauté onion in ghee until tender. Stir in rice, salt, and coconut milk-water mixture. Bring to a boil, cover, reduce heat and simmer 16-20 min., until liquid is absorbed and rice is tender.
When serving, sprinkle with toasted coconut if desired for garnish.

Notes:
Tasty stuff but high in fat with the butter and coconut milk, so not one to make every week!
