Tuna Macaroni Salad

Recipe: Tuna Macaroni Salad

Serves: 6-8


12-16 oz. pkg. elbow macaroni
salt
2 cans chunk light tuna
2 stalks celery, minced
1/3 c. mayonnaise or Miracle Whip
scant 1/3 c. sour cream
about 1/3 c. milk
1/2 fresh lemon
fresh ground pepper

Boil macaroni in salted water until just done. Drain and rinse in cold water until cool. Place in large bowl. Drain tuna and flake into noodles. Add minced celery.

In small bowl, whisk together mayo, sour cream, and enough milk to make dressing pourable but not runny. Mix in juice of 1/2 lemon and salt and pepper to taste. Pour dressing over macaroni and mix well. Serve chilled.

Notes:
This is an approximation of how much dressing to make - I just glop in some of each and stir, till it looks right. You can add various other ingredients to make it more interesting - e.g. minced green onion, parsley, sliced water chestnuts, etc. I tend to make it with reduced-fat things, water-packed tuna, light mayo, light sour cream. Tastes fine. This is a childhood recipe which is good summer comfort food for me, but my SO finds it pretty boring. *g* So I tend to eat it for lunch and he has something else!
