Chilled Cucumber-Radish Soup

Recipe: Chilled Cucumber -Radish Soup
From: emiime
Serves: 6


1/2 lb. radishes
1/2 lb. cucumbers
1 pt. buttermilk
1 c. plain yogurt
approx. 1 tsp. white sugar
approx. 2 tsp. plain rice wine vinegar
salt & pepper to taste

Scrub and trim radishes, but do not peel. Chop roughly. Peel cucumbers, cut in half longways, and remove seeds. Dice roughly.

Put radishes, cucumbers, buttermilk, and yogurt in a food processor or blender and blend until pureéd. Add sugar, vinegar, and salt and pepper to taste. Serve cold in small cups or bowls.

Notes:
I got this from emiime last summer when I had been inundated with radishes from my CSA and had no clue what to do with them. It's a pretty pink color and quite tasty; it's rather odd that I like it, actually, since I'm not actually that fond of any of the main ingredients!
