3T butter, divided
1/2c chopped onions
2t chopped garlic
1 lg apple, finely cubed
1/2c chopped celery
1T curry powder
1/2c canned crushed tomatoes, not drained
1c Chicken broth
1 bay leaf
s&p
1/2t sugar
4 boneless chicken breast halves
1T coarsely chopped cilantro
Heat 1T butter. Add onion, garlic, apple and celery. Stir until wilted. Add curry, stir. Add tomatoes, broth, bay leaf, S&P, sugar. Bring to boil, simmer 15 mins, stirring. Discard bay leaf and put mix in blender to process to a fine texture. Sprinkle chicken with S&P.
Heat remaining butter & add chicken. Cook over moderate heat until lightly browned. Turn and cook 5 minutes more (do not overcook). Pour sauce over chicken, bring to boil & simmer couple of minutes. Serve w/chopped cilantro.
